Pasarisa Cabernet Sauvignon is an elegant Argentinian red wine made from 100% Cabernet Sauvignon sourced from Tolombón and Cafayate in the Calchaquí Valleys, Salta. Grapes from different high-altitude plots are vinified separately to preserve character and complexity. A portion of the wine undergoes cold pre-fermentation maceration, followed by spontaneous fermentation with careful pump-overs and punch-downs to achieve fine, polished tannins. Around 20% of the wine ages in French oak barrels for nearly twelve months, while the rest remains in stainless-steel tanks, resulting in a harmonious final blend.
This Cabernet Sauvignon from Salta is full-bodied yet balanced, with medium, refined tannins. On the nose, it displays blackcurrant, blackberry and dark cherry, with hints of violet, graphite, dried herbs and subtle spice.
