Harvested by hand at night to preserve freshness, the grapes undergo manual berry selection before fermenting in 390-liter French oak egg-shaped barrels. These custom vessels allow for natural micro-fermentation without mechanical intervention, enhancing the wine’s aromatic purity and textural complexity. After malolactic fermentation, the wine is aged for 12 months in the same barrels, followed by a second 5-month refinement in French oak.
