El Enemigo Bonarda "Los Paraísos" – Elegance and Depth from Mendoza’s East

El Enemigo Bonarda Single Vineyard “Los Paraísos” is a refined 100% Bonarda created by Alejandro Vigil and Adrianna Catena, expressing the full potential of this historic varietal in a contemporary, terroir-driven style. The grapes come from the Los Paraísos vineyard in Rivadavia, Mendoza, located at 2,132 ft (650 meters) above sea level, with sandy soils that allow for excellent drainage and concentration.

Fermented with wild yeasts at a maximum temperature of 82°F (28°C) over 15 days, followed by a 25-day maceration, the wine is then aged for 12 months in 100-year-old foudres, which gives it structure while preserving its fruit-driven purity and freshness.

It displays an intense deep violet color, and the nose reveals aromas of blueberries, dried figs, and subtle hints of cedar and cocoa. On the palate, it is lush and balanced, with soft tannins, bright acidity, and a long, polished finish featuring savory herbal notes and a gentle spice.

This Bonarda is an excellent match for duck breast, mushroom risotto, pasta with truffle oil, and herb-crusted pork loin. It also pairs well with blue cheeses and Middle Eastern-inspired dishes with warm spices and roasted vegetables.
