Crafted through gentle pressing and fermentation in French oak barrels (10% new, 90% used), and using wild yeasts, this wine develops complexity and authenticity from the start. It is aged for 15 months in 250-liter French oak barrels, with 35% aged under flor (a natural yeast veil), adding subtle oxidative notes and unique texture.
The result is a wine with a bright yellow color, almost golden. On the nose, it reveals aromas of pear, ripe apple, and delicate hints of almond and dried herbs. The palate is silky and oily, offering great volume, intense minerality, and a long, mouthwatering finish with notes of white fruit and a touch of salinity. Its vibrant acidity brings energy and freshness, making it both complex and refreshing.
